#1 An original starter: Pumpkin Cappuccino with Paprika Chantilly Cream

  • A pumpkin

  • 40cl of water

  • A vegetable stock cube

  • 30g of whole liquid cream

  • Salt, pepper (adjust according to your taste)

  • 10cl of whole liquid cream

  • Paprika (adjust according to your taste)

  • Salt, pepper (adjust according to your taste)

How to prepare this aperitif?

  • Boil water with the vegetable stock cube

  • Cut the pumpkin in half and remove the seeds and stringy flesh.

  • Wait for the water to boil and immerse the pumpkin in it for about 20 minutes.

  • Remove 1/4 of the cooking water and keep the remaining 3/4

  • Place the two halves of the pumpkin in a salad bowl.

  • Add the 30 grams of cream and mix

  • Mix everything together and add a little of the reserved broth if necessary.

  • Add salt and pepper to taste

  • Place 10cl of liquid cream, your whisks and your salad bowl in the freezer for at least 10 minutes.

  • Add a teaspoon of paprika (or more depending on your taste)

  • Whip your cream until you get a whipped cream texture.

  • Pour your whipped cream into a piping bag and place it on the Cappuccinos once they have cooled.

  • Sprinkle with paprika

#2 A comforting main dish: Rabbit with mustard and beer

  • 6 rabbit legs

  • 6 teaspoons of mustard

  • 6 glasses of beer

  • 3 shallots

  • 6 tablespoons olive oil

  • 6 bay leaves

  • A few sprigs of rosemary

  • Salt, pepper (adjust according to your taste)

How to prepare this dish?

  • Finely chop the shallots. Cook them over low heat in a saucepan after adding the oil. Add the mustard and mix until you obtain a smooth sauce.

  • Place the rabbit legs in the pan and cook for 10 minutes.

  • Pour in the beer and add the bay leaves, as well as the rosemary after having stripped the branches.

  • Cover everything and let simmer for an hour over low heat.

  • Remove the bay leaves, salt and pepper to taste

  • Serve this meat with tagliatelle or rice

How to prepare this pie?

  • Preheat the oven to 180° or thermostat 6

  • In a salad bowl, beat the eggs, sugar, grated almonds and cream.

  • Peel the apples and pears then cut them into slices.

  • Destem the grapes

  • Place the dough in a pie dish, add the preparation made previously, then add the different fruits.

  • Sprinkle with almonds and place in the oven for 45 minutes
