  • 250 grams of foie gras in ballotine
  • 150 grams of fig jam or chutney
  • 120 grams of foie gras
  • 50 grams of parmesan
  • 40 grams of flour
  • 3 eggs
  • 3 thin slices of gingerbread
  • 15 centiliters of whole liquid cream
  • 3 tablespoons hot water
  • 2 tablespoons gingerbread spice
  • Salt, pepper

Step #1:

Prepare your foie gras whipped cream. Cut the foie gras into small pieces using a chef's knife or a slicing knife . Place them in a saucepan with the whole cream and bring to the boil. Lower the heat and simmer for 5 minutes. Season everything according to your tastes. Once it suits you, mix everything with a food processor to obtain a very smooth texture. Place the preparation in the fridge for 4 hours. At the same time, prepare the oven at 200°C.

Step #2:

Separate the egg whites and yolks . Place the yolks in a bain-marie and whisk them with the hot water. The mixture should foam and thicken. Once the mixture has set, remove it from the heat and add the flour, parmesan and melted butter. Mix. Beat the egg whites until stiff and fold them into the previous mixture using a spatula. Pour the mixture onto a silicone baking sheet or sponge cake mold and bake for 10 minutes in the preheated oven. When it comes out of the oven, turn your mixture over onto a clean, slightly damp tea towel. Roll the biscuit in the tea towel. Set it aside and let it cool.

Step # 3 :

Whip the foie gras cream using an electric mixer until you obtain whipped cream. Divide the mixture in two. Unroll your sponge cake. Spread the fig jam on top, then the first half of the foie gras whipped cream. Roll your sponge cake again to form a log.

Step #4:

Once your biscuit is rolled into a log, place the second half of your foie gras whipped cream on top to cover it. Using a fork, make lines to create a log effect. To cut, use a chef's knife or a utility knife to make slices of about 2 centimeters.

Peel your chestnuts. Boil them in water for 20 minutes, then crush them with a Nakiri knife using the side of the blade to obtain a texture similar to that of a puree. Mix them using an electric mixer. At the same time, preheat your oven to 180°C.

  • 200 grams of sugar

  • 150 grams of icing sugar
  • 1 tablespoon of water
  • 3 drops of green food coloring
  • 2 drops of red food coloring
  • Some colored vermicelli

Step # 1 :

Preheat the oven to 180°C. Melt the butter then mix it with the sugar and vanilla sugar, gradually adding the eggs.

Step #2:

Add the flour then the yeast and mix everything together. Then add a pinch of salt.

Step #3:

Pour the mixture into a buttered mold and bake for 45 minutes. Monitor the cooking with a knife. You can use a paring knife for this. Then let the cake cool and cut it into thick pieces using a bread knife .

Step #4:

Prepare the topping. In a bowl, whisk the egg white until it becomes slightly foamy. Then add the icing sugar and water and mix until everything turns white.
